The flow of time is experienced subjectively, and as we age it often feels as if it is speeding up. However these are some very real steps we can take to slow down AGE. Most importantly, we can reduce the quantity of AGEs in the body, when AGE means Advanced Glycation End products.
Advanced Glycation End products are substances in the body that are produced when our body consumes or manufactures harmful molecules that attach to either proteins or fat cells, causing them to break down. These harmful molecules literally oxidize or "rust" our bodies from within, and are highly associated with all manner of diseases, from cancer to nerve damage, to vision problems, kidney damage, liver damage, and especially diabetes. Want to slow down and even reverse aging? Stop it at its source by reducing foods that increase AGEs.
By far, the greatest sources of AGEs are sugar and PUFAs, which are Polyunsaturated Fatty Acids such as corn oil, safflower oil, canola oil, and other vegetable oils. The type of sugar called fructose is especially damaging to the liver and the rest of the body. (Common table sugar is half fructose). Vegetable oils, once promoted as a healthier alternative to saturated animal derived fats, are now known to be highly unstable and quickly turn rancid by exposure to heat and light. Those commonly used oils promote inflammation throughout the body and create AGEs within the body.
One of the biggest AGE-rs of the body is the conventional bottle of salad dressing, loaded with PUFAs such as canola oil, safflower oil, or other vegetable oil. You are eating salad for your health-- why douse it in an unstable and toxic oil? A much healthier option is to sprinkle on a few teaspoons of olive oil and red wine vinegar, with a little salt and pepper. Another option is to look for a salad oil brand such as Primal Kitchen, which is made with avocado oil. Eating out at a restaurant? Ask for an olive oil and vinegar on the side. If enough people request it, it will become more commonly available. I bought a small silicone bottle that I can fill with oil and vinegar and carry in my purse-- all I have to do is remember to bring it!
Time flows on, and aging is inevitable. Reduce your dietary AGEs and slow it down for a healthy life.
